Ризото с миди и скариди, италиански стил
Продукти
- 1 глава лук
- 3 скилидки чесън
- 6 с.л. зехтин
- 50 г краве масло
- 20 скариди
- 600 г миди (черни миди и вонголе)
- 50 мл бяло вино
- 3 чаени чаши зеленчуков бульон
- 1 чаена чаша ориз за ризото
- щипка чили
- магданоз
- сол
- черен пипер
Начин на приготвяне
1. Измиваме добре мидите и изчистваме скаридите като ги обелваме. Запазваме главите.
2. В тиган слагаме 3 супени лъжици зехтин, нарязан на ситно лук и леко запържваме за 2 минути. Добавяме нарязания на ситно чесън и щипка чили и малко сол. Наливаме виното и оставяме да се изпари леко. Добавяме нарязани на кръгчета 10 скариди и мидите. Слагаме капак да се задушат за около 5-6 минути и сваляме от котлона.
3. Изсипваме тигана в купа и покриваме с капак. Слагаме в тигана 3 супени лъжици зехтин. Добавяме ориза, главите на скаридите, малко бяло вино и започваме да запържваме ориза докато стане стъклен.
4. Добавяме горещия бульон и оставяме 20 минути да поеме течността, опитваме и добавяме сол, ако е необходимо. След като е готов, махаме главите на скаридите, добавяме маслото и разбъркваме, за да добие кремообразна консистенция.
5. Може да отстраним предварително черупките на мидите, като оставим само няколко за декорация, добавяме скаридите и мидите към ориза.
6. В отделен тиган слагаме сол на дъното и запичаме за 1-2 минути останалите 10 скариди и ги използваме за декорация при сервиране.
7. Сервираме ястието топло и го поръсваме с едро нарязан магданоз. Сервираме с бяло вино.
